The Ingredients
This delectable dish is native to the Efik and Ibibio people of Cross Rivers and Akwa Ibom states and is prepared using fluted pumpkin leaves (a.k.a ugwu) and Malabar spinach (locally called waterleaf in Nigeria). Broken down to barebones, it is actually a combination of seafood protein and other protein e.g. beef, innards, and more. It is the combination of the flavors from those two leaves, and the umami flavor from the seafood, that brings out the unique taste that makes Edika Ikong soup so memorable.
